PLEASE NOTE
1. There are many variations of preparing fried ram especially during Eid. Some believe that the meat should not be washed or should be washed once so as to retain all the taste and flavour of the meat. I always wash mine several times and I honestly do not see any difference in the taste. I believe it's more hygienic. But it's your choice.
2. You may choose to marinate the raw meat for extra flavour.

Ingredients and spices that need to be Take to make Fried Ram (Mutton):
- Ram meat (Mutton)
- Onions (lots and lots of it)
- Cubes Seasoning
- Spices (especially ginger powder, garlic powder, curry nd thyme)
- Fresh ginger and garlic (mince or pound)
- Ground chilli pepper (yaji/barkonu)
- Vegetable oil
- Water
Instructions to make to make Fried Ram (Mutton)
- Wash meat to remove dirt. Put in a pot. Add in cut onions, spices of choice, seasoning cubes, fresh ginger and garlic, yaji and water. Stir.
- Close lid and put on heat source.
- Check and stir occasionally.
- Turn off heat source when the water has almost dried off. Please do not allow it to dry off completely. You can put in more water if you want to use the broth, but that means you may have to increase quantity of seasoning.
- Put a deep frying pan on heat source. Add in vegetable oil and some cuts of onion.
- Allow to heat up.
- Transfer the quantity of meat that is enough for one batch to a colander. Drain briefly and transfer immediately to hot oil.
- Fry.
- Transfer to a different colander when fried to drain excess oil. Put in a bowl and sprinkle yaji (chilli powder). Toss. You have to be fast in this step because the yaji will stick more to the meat when it's hot and still a bit moist with the oil.
