Tomato Rice is delicious one pot meal recipe and popular rice dish in South India. This recipe is tasty, healthy and perfect to pack in lunch box or for dinner. Tomato Rice is made with lots of tomatoes, herbs and spices. It can be served along without any sides as it is very tasty and flavorful on its own. However salad, raita or papad can be served along.
Ingredients and spices that need to be Prepare to make Tomato Rice:
- 1 cup Basmati Rice
- 1 medium-size onion
- 3 mediun-size tomatoes
- 2 green chili
- 1 tbsp ginger garlic paste
- 4 sprig pudina leaves
- 6-8 sprig coriander leaves
- 1 tsp Chili powder
- 1 tsp Coriander powder
- 1/2 tsp Jeera Powder
- 1/4 tsp turmeric powder
- 1/2 lemon
- 3 tbsp oil
- Whole Spices :
- 2 Bay leaf
- 3 cloves
- 2 cardamom
- 1 inch cinnamon stick
- 1 tsp Saunf
Instructions to make to make Tomato Rice
- Wash basmati rice and soak in water for 30 minutes. Slice onion, slit green chili, chop tomatoes, pudina and coriander leaves.
- In a pressure cooker heat oil. Add in whole spices, when it splutters add in sliced onion and saute until translucent.
- Add in slit green chili, ginger garlic paste and roughly chopped pudina and corinader leaves. Saute until raw smell of ginger garlic goes away. Add in chopped tomatoes and saute until tomatoes are soft and mushy. Add in salt to cook tomatoes faster.
- Add in chili powder, coriander powder, turmeric powder, salt and saute until oil release.
- Add 1&3/4 cup warm water and let it come to a boil. Check for salt and adjust. Drain the rice and add it to cooker and let it cook until water is almost evaporated. Add in juice of 1/2 lemon. (Adjust or skip lemon juice depending on the sourness of tomato.)
- Close pressure cooker lid and pressure cook for 1 whistle on medium flame. Switch off the flame and open the lid when pressure settles down. Remove the lid and gently fluff up Tomato Rice.
- Tomato Rice is ready to be served. I served with onion cucumber raita and Bagara Baingan
