Instructions to make to make Deviled Chicken (Sri Lankan)
- Put the 12 pieces of skinless chicken drumsticks into a medium/large pot and add water (3/4 ways or just enough for boiling, into the pot).
- Add the vinegar and salt (to taste).
- Add the chili flakes, cover the pot and let the chicken boil.
- Once the chicken has boiled/when there's little bit of liquid left, turn off this stove and drain the liquid into another pot/container and keep aside. Do not throw the liquid!
- Add the oil into the pot with the chicken pieces and leave the chicken to fry/brown on the stove. Do not turn the chicken pieces over or stir till a nice brown color has been achieved on each side. Once the color is achieved turn the piece over and let it fry on the other side.
- Add the garlic and ginger and let it fry with the chicken pieces.
- Now add the onion pieces and let it fry. Add the tomato pieces if using tomato as well).
- Add the soy sauce and stir.
- Add the bell pepper and stir.
- Add the liquid from the boiled chicken and stir. Let the liquid reduce to only cover the bottom.
- Add the tomato sauce and stir.
- Now add the french fries/fried potato wedges and give it a quick stir.
- Note: The bell peppers are added at the end so cooking time is less and will maintain crunch. The fries should not be stirred too much as it may get soggy.
